I grew up thinking chicken adobo was made up of chicken, soy sauce and sugar! And yes, no vinegar. That adobo concoction might be odd to you but it has a very special part in my heart due to my loving inay (mother).
I know mother's day is far from now when I publish this, but did you know that this is not the case here in UK?
Mother's day in UK
We celebrate it here in UK every 4nd Sunday of Christian Lent which is approximately 9 months before Christmas! I do not know if this has anything to do why UK celebrates mother's day on a different date, but I do know being a mother is universal. And so Happy Mother's day to all nanays out there especially to those living abroad to provide for their children in Philippines. Home sickness is the biggest challenge as an OFW and so I hope our children will always appreciate our own version of chicken adobo, with vinegar or not.
